For all the home chefs out there…


This one backs up my pumpkin theory too πŸ˜‰ (see my post Spring has sprung! for the background to this theory). Oh and I made my pumpkin with feta salad! Deeelish! 1 x can of Baby beets cut into quarters, 2 hard boiled eggs chopped, 300g roasted pumpkin (cut into small cubes & drizzle with olive oil, season with S&P & cook at 180 degrees C fan forced for 25 mins), 1/2 an avocado cut into small cubes, two basil leaves chopped, a handful of spinach leaves, oh and I nearly forgot, 30g feta cheese cut into cubes πŸ‘. No dressing required. Healthy AND delicious! Great for this lovely BBQ weather we’ve been having β˜€οΈπŸ˜ŽπŸΈ
