I love the change in seasons! The cooler weather brings on an appetite for comfort food in the form of warm, hearty meals. This hotpot is no exception, it’s a great way to while away a weekend wintertime afternoon. I’m stashing this recipe away for exactly that occasion. I think next time I’ll sneak in a dash of red wine and some carrot and celery for more flavour, texture and much needed nutrients for the winter months. To bring in an Italian twist, a little Parmesan cheese wouldn’t hurt!
